      About Diamond Foods

      Diamond Foods is a pantry label whose range on our shelves is made up of single spices and tinned fish. There are no blends here: each pack is one ingredient, sold in sizes for an everyday kitchen and larger bags for cooks who grind their own masalas or cook in quantity.

      On the spice side, whole and crushed black pepper sit in peppercorns, with coriander seeds, cumin seeds and methi seeds close by in whole spices, and red chilli powder among the ground spices. Jack mackerel, in natural juice and in tomato sauce, is in our tinned fish collection.

      Whole black pepper is the heat in Sri Lankan pepper chicken, Chettinad masala and South Indian rasam, while crushed pepper is ready to scatter over omelettes, fried eggs and devilled dishes. Coriander and cumin seeds are dry roasted and ground for garam masala, sambar powder and Sri Lankan roasted curry powder, and fenugreek seeds go into the tempering for fish curry, kadhi and pickles, or are soaked with rice and urad for dosa batter. Chilli powder brings the colour and heat to everyday curries. The mackerel in natural juice is best for cutlets and sambols, the tomato sauce version for a fast curry with rice.

      Whole spices keep their aroma far longer than ground ones, so buy seeds in larger bags and grind small amounts as you need them. Store everything in airtight jars away from the stove.
