Diamond Foods Cut Green Mango is raw, unripe mango cut into pieces and individually quick frozen in India, the sour green mango that South Indian and Sri Lankan cooks add to fish curry, sambar and dal. Raw mango is only in season for a short time, so a box in the freezer keeps that clean, tart flavour on hand all year. The 400g box holds nothing but mango. How to use it
Add the pieces straight to a simmering fish curry or mango sambar and cook until soft, or stir them into a moong dal for a sour finish. Thawed, they can be mixed with chilli powder, salt and mustard seed tempering for a quick instant pickle, or ground with coconut and green chilli into a sharp chutney. Do not refreeze once thawed.
