Diamond Foods Emperor is pink ear emperor, Lethrinus lentjan, cut into thick steaks and frozen, a firm, white, mild fish prized for curries along the coasts of Sri Lanka and South India. It is caught in the Indian Ocean and packed with a light ice glaze, 800g of fish in a bag. The steaks hold together in a simmering sauce and fry well with a spice rub. How to use it
Thaw the steaks in the fridge, rinse and pat dry, then cook them through until piping hot. Rub with chilli powder, turmeric and salt and shallow fry until golden, or simmer in a tamarind and coconut curry until the flesh flakes from the bone. Emperor also suits a Kerala style meen pollichathu baked in banana leaf. Do not re-freeze once thawed.
