Diamond Foods Silver Belly is orangefin ponyfish, Leiognathus bindus, the small, flat, silvery fish called kaaral in Tamil and mullan in Malayalam. Caught in the Indian Ocean and frozen whole, these little fish are a coastal favourite, fried crisp until the bones can be eaten or simmered in a thin, peppery curry. The bag holds 560g. How to use it
Thaw in the fridge, then trim the fins, gut and rinse the fish. For kaaral fry, toss in chilli powder, turmeric, a little rice flour and salt and deep or shallow fry until crisp. For kaaral kuzhambu, simmer in a tamarind and shallot gravy until cooked through. Serve with hot rice.
