Diamond Foods Trevally is wild caught white trevally, Pseudocaranx dentex, cut into neat steaks with the head packed alongside, then frozen. Trevally, known as paarai in Tamil homes, is a firm, mild white fish that is a favourite for South Indian and Sri Lankan fish curry and for frying, because the steaks keep their shape and the flesh flakes cleanly from the bone. How to use it
Thaw in the fridge, rinse and pat the pieces dry. For fish fry, rub the steaks with chilli powder, turmeric, ginger garlic paste, lemon juice and salt, rest for twenty minutes, then shallow fry until crisp at the edges and cooked through. For a curry, simmer gently in a tamarind and coconut gravy with curry leaves. Use the head for a rich fish head curry or a stock. Do not refreeze once thawed.
