Diamond Foods Sow Para is yellowstripe scad, Selaroides leptolepis, a small, silver fish with a bright yellow stripe that Sri Lankan Tamil families know as sow para. Caught in the Indian Ocean and frozen whole, it has soft, mild flesh that is perfect for frying whole or adding to a spicy curry. The bag holds 900g of fish. How to use it
Thaw in the fridge, then scale, gut and rinse the fish. Score the sides, rub with chilli powder, turmeric and salt and fry until crisp, or simmer in a Jaffna style curry with roasted curry powder, tamarind and coconut milk. Cook through until piping hot and serve with rice.
