Diamond Foods Fish Roe is the roe of the narrow barred Spanish mackerel, Scomberomorus commerson, the fish known in South Asian kitchens as king fish, seer or vanjaram. The whole roe sacs are frozen in a 560g bag, a rich, savoury treat that many families save for a special fry or a thick, spicy curry. Caught in the Pacific Ocean. How to use it
Thaw the roe in the fridge and handle it gently so the sacs stay whole. Coat in chilli powder, turmeric, ginger garlic paste and salt and shallow fry over a moderate heat until firm and golden, or scramble it with onion, green chilli and grated coconut into a roe thoran. It also goes into a tamarind curry. Cook through until piping hot.
