Rice mix powders are spice blends made to be stirred into cooked rice, the variety rice, or kalavai sadam, of South Indian homes. Lemon rice powder brings turmeric, chilli, chana dal and mustard for chitranna, puliogare or puliyodarai powder makes the dark, sour tamarind rice of temple kitchens, tomato rice powder flavours thakkali sadam, and dhall rice powder, paruppu podi, is mixed with rice and ghee.
Bisibele bath masala is different: it goes into a one-pot dish of rice, toor dal, vegetables and tamarind from Karnataka, served hot with ghee and boondi. Choose lemon or tomato rice mixes for quick lunches and school tiffin boxes, puliyodarai for travel and festivals because it keeps well, and bisibele bath masala for a filling weekend meal.
For the best texture, spread freshly cooked rice on a plate to cool for a few minutes before mixing, so the grains stay separate, then fold in the powder with a little oil and a fresh tempering of mustard seeds, peanuts and curry leaves. See sona masoori rice or ponni rice for the grain, sambar powder and idli podi for other blends, and all our South Indian powders.
