Milk & Cream

Milk and cream run through South Asian cooking in more ways than a cup of tea. Doodh is simmered with cardamom and sugar for kheer and payasam, reduced for rabri, curdled with lemon juice to make homemade paneer, and poured into the pan for chai that boils twice before it is strained. Cream, or malai in Hindi and Urdu, gives korma, butter chicken and dal makhani their soft, rounded finish.

This collection brings together dairy milk in whole, semi skimmed and skimmed styles, plant milk made from oats, soya, almond and coconut, and cream for cooking and pouring. Whole milk is the choice for sweets and for setting yogurt, as the fat gives body and a thicker set. Semi skimmed suits tea and breakfast cereal. Plant milks work for vegan chai and smoothies, though some split in very hot tea, so look for barista style versions if that matters.

Keep milk and cream at the back of the fridge, where the temperature is steadiest, and use opened cartons within a few days. We send fresh milk and cream within our local delivery area only, as they need to stay cold all the way to your door.

For milk that keeps in the cupboard, condensed and evaporated milk are the usual stand-ins. Lassi and flavoured milk drinks sit in lassi and flavoured milk, and the rest of the fridge range is in chilled and dairy.
