Diamond Foods Cassava Cut is peeled cassava, or tapioca, cut into small bite sized pieces and frozen, so it cooks quickly and evenly with no peeling or chopping. Cassava, known as kappa in Kerala and maravalli kizhangu in Tamil Nadu, has a soft, starchy texture and gentle sweetness that pairs perfectly with spicy curries and sambols. How to use it
Put the tapioca in water and boil it for a few minutes until tender, pour out the water, then add salt and spices to taste. The small pieces are ideal for kappa puzhukku with coconut and green chilli, for Sri Lankan manioc curry in coconut milk, or for a quick cassava stir fry with onions, mustard seeds and curry leaves. Do not refreeze after thawing.
