BTM Jack Mackerel in Brine is Chilean jack mackerel, Trachurus murphyi, caught by purse seine in the South Pacific and packed in lightly salted water. This pack holds two 425g tins, each with 280g of fish once drained. Jack mackerel is a firm, meaty fish with a fuller flavour than tuna, and the tin lists 23g of protein and 2.06g of omega-3 fatty acids per 100g. The label is printed in Sinhala and Tamil as well as English, and tinned mackerel like this is a store cupboard staple in Sri Lankan and South Indian homes. How to use it
Drain the brine and lift out the pieces, removing the central bone if you prefer. For a quick Sri Lankan style curry, fry onion, green chilli, curry leaves and garlic, add chilli powder and turmeric, then the fish, a squeeze of lime and a splash of coconut milk and simmer for a few minutes. The fish also makes fish cutlets with mashed potato, a dry devilled fry with peppers and onion, mackerel sambol, or a filling for sandwiches and wraps.
