Fudco Blanched Peanuts are raw peanuts with the red skins already removed, sold in a 1kg bag packed in a protective atmosphere. Country of origin is China. Skinless peanuts roast evenly to a clean golden colour and crush into a pale, even crumb, which is exactly what sabudana khichdi, vada and fasting chutneys call for during Navratri.
How to use it
Dry roast the peanuts in a heavy pan over a medium heat, stirring all the time, for six to eight minutes until golden and fragrant. Leave to cool, then pulse in a grinder to a coarse crumb. Stir a few spoonfuls through soaked sabudana with rock salt before cooking khichdi, or blend with green chilli, cumin, yoghurt and rock salt for a quick vrat chutney. For peanut chikki, melt jaggery with a splash of water to the hard-crack stage, stir in roasted peanuts, spread thin on a greased tray and cut while warm.
