Mantra is the groundnut oil from V.V.V & Sons, the Tamil Nadu house behind Idhayam, and it is what a South Indian kitchen reaches for when there is frying to do. Clear, faintly sweet and stable at a high heat, so vada and murukku crisp instead of soaking. One litre, 912g net, trans fat free and free from argemone oil.
Hold it around 180C for vada, bonda, bhaji and murukku, and let it come back up to temperature between batches. It makes a clean tarka, it is the traditional fat for a kadai poriyal, and it stands in for sunflower oil anywhere you want a little nuttiness behind the spice. Never pour used oil back into the bottle.
