Paneer & Vegetable Masala

Vegetable masala, or sabzi masala, is an all purpose blend for dry and gravy vegetable dishes, usually with coriander, cumin, chilli, turmeric, dried mango and fenugreek leaves. Kitchen king is a richer North Indian all-rounder that suits almost any vegetable or paneer dish. There are also recipe blends for shahi paneer in a creamy nut and tomato gravy, palak paneer with spinach, paneer tikka for the grill, and aloo bhaji, the spiced potato side.

Choose sabzi masala for everyday aloo gobi, bhindi, mixed vegetables and cabbage, kitchen king when you want a restaurant-style gravy, and a dish-specific blend for special meals. If you follow a Jain diet, check the ingredients, as some blends contain garlic or onion powder.

For paneer, fry cubes lightly or soak them in hot salted water for ten minutes so they stay soft in the gravy. Add the masala after the onions and tomatoes have broken down, and finish with a pinch of kasuri methi and a little cream.
