Diamond Foods Silver Pomfret is whole silver pomfret, Pampus argenteus, the prized white pomfret or vaval of Indian and Sri Lankan kitchens. Its soft, delicate white flesh and single central bone make it one of the most popular fish for special occasions, whether fried whole with a red masala or stuffed with green chutney. How to use it
Thaw in the fridge, gut and rinse, then cut two or three slashes on each side. For a Parsi or Mangalorean style fry, coat in chilli, turmeric, ginger garlic paste and lemon, then shallow fry. For patrani style, spread with coriander and coconut chutney, wrap in banana leaf and steam until cooked through.
