Diamond Foods Frozen Indian Mackerel Whole is whole Indian mackerel, Rastrelliger kanagurta, the silver and gold striped ayala or kumla loved across South India and Sri Lanka. Oily, rich and full of flavour, it is the fish for a crisp masala fry, a sour meen kuzhambu or a smoky grill. The fish are frozen whole and packed in India. How to use it
The pack says to defrost thoroughly and cook fully prior to consumption. Thaw in the fridge, then gut, clean and rinse the fish and cut slashes into each side. Rub with chilli powder, turmeric, salt and ginger garlic paste and shallow fry, or stuff with a green masala and grill. For curry, cut into pieces and simmer in a tamarind and coconut gravy until cooked through.
