Diamond Foods Frozen Indian Mackerel Headless is Indian mackerel, Rastrelliger kanagurta, with the heads already removed, the ayala or kumla of South Indian and Sri Lankan homes. These oily, full flavoured fish are a weekday favourite fried with a red masala or simmered in a sour curry. How to use it
The pack says to defrost thoroughly and cook fully prior to consumption. Thaw in the fridge, clean the cavity, rinse and score the sides, then rub with chilli powder, turmeric, salt and a little lime and shallow fry until crisp. For mackerel curry, simmer the fish in a coconut and tamarind gravy until cooked through.
