Diamond Foods Jappaness is Japanese threadfin bream, Nemipterus japonicus, the small pink and yellow striped fish sold in Tamil shops as sankara or thullu mandai. It is caught in the Indian Ocean, cleaned with the heads off and frozen, 900g to a bag. The flesh is white, delicate and slightly sweet, and the fish are the right size for frying whole or adding to a home style fish curry. Find more frozen fish in our Frozen Fish range.
How to use it
Thaw in the fridge, rinse and pat dry, then cook the fish through until piping hot. Score the sides, rub with chilli powder, turmeric, salt and a squeeze of lime and shallow fry until crisp. For a Chettinad or Sri Lankan style kuzhambu, add the fish to a simmering tamarind gravy for the last few minutes so it stays whole.
