Frozen sausages are minced meat seasoned and filled into casings, then frozen so they keep for months. For many South Asian households in the UK the choice comes down to Halal chicken, beef and lamb sausages, as most supermarket sausages are pork. Chicken sausages are mild and lean, beef sausages are meatier, and some ranges add green chilli, black pepper or tikka spice. Chicken frankfurters and cocktail sausages are also frozen and suit children's parties.
Choose by thickness and flavour. Thick sausages suit a full breakfast or bangers and mash, thin ones and chipolatas cook quickly and go into wraps and rolls, and cocktail sausages make party platters. Look for a Halal certification mark on the pack if it matters to you, and check the meat content on the label when comparing.
Sausages can be cooked from frozen: fry them over a medium heat, turning often, or bake them in the oven or air fryer until browned and cooked all the way through, with no pink in the middle. In Sri Lanka, sliced sausages are stir fried with onion, capsicum, chilli flakes and tomato sauce into devilled sausages, a favourite with rice or as a bite with drinks. Serve breakfast sausages with baked beans and toast, or tuck them into a paratha roll. Keep them at -18°C. For other frozen meat, see frozen chicken and kebabs, and with chips, frozen chips and potatoes. The full aisle is frozen.
