Diamond Foods Avial Mix is a bag of individually quick frozen vegetables cut for avial, the Kerala mixed vegetable dish cooked with coconut and yoghurt. It brings together yam, carrot, drumsticks, raw banana, long beans, snake gourd and brinjal, hand picked and frozen within hours to keep their taste and texture. How to use it
Take out the amount you need and let it thaw. Cook the vegetables with a little water, turmeric and salt until just tender, then fold in ground coconut, cumin and green chilli with a spoonful of beaten yoghurt or tamarind. Finish with raw coconut oil and curry leaves, and serve with rice, sambar and pappadam. The mix also works in kootu and sambar.
