Large, glossy aubergines with deep purple skin and a green cap, the same vegetable called brinjal or baingan. Each one has plenty of creamy flesh, which makes it the best choice for dishes where the aubergine is charred, mashed or cut into thick slices. Think baingan bharta, bhaingan masala, moussaka, or thick rounds on the barbecue.
How to use it
Roast a whole aubergine over a gas flame or on a barbecue until the skin is black and blistered and the flesh is soft through, then scoop it out for bharta with onion, tomato and green chilli, or for a smoky yoghurt dip. Cut thick slices, salt them for 20 minutes if you like, then pat dry and pan fry with turmeric and chilli powder. Cubes go into a dry aloo baingan or a Sri Lankan aubergine curry with coconut milk.
