Diamond Foods Vannamei Prawns 21/25 P&D are whiteleg prawns, Litopenaeus vannamei, already peeled and deveined, so they go straight from the bag into the pan. Graded at 21 to 25 prawns to the pound, they are a medium large size that stays plump and juicy in a curry or stir fry. They are farm raised in India and individually quick frozen, so you can take out just what you need from the generous 700g pack. Find more in our Frozen Prawns & Seafood range.
How to use it
The pack says to defrost thoroughly and cook fully before eating. Thaw in the fridge or in a sealed bag in cold water, drain and pat dry. Add to a prawn masala, a Kerala coconut curry, a Sri Lankan prawn curry, biryani, fried rice or noodles towards the end of cooking and cook until pink and opaque. For starters, coat in a spiced batter and fry, or grill on skewers with garlic and chilli. Do not refreeze once thawed.
