Diamond Foods Small Anchovy is whole Commerson's anchovy, Stolephorus commersoni, the little silver fish known as nethili or netholi in Tamil and Malayalam homes. Caught in the Indian Ocean and frozen whole, these tiny fish are the base of a crisp nethili fry and a quick, tangy nethili kuzhambu. The bag holds 630g. How to use it
Thaw in the fridge, then pinch off the heads and pull out the gut with the backbone if you like, and rinse well. Toss in chilli powder, turmeric, a spoon of rice flour and salt and fry in hot oil until crisp, or simmer in a tamarind, tomato and shallot gravy for a few minutes. Cook through until piping hot.
