Diamond Foods Mullu Vaalai is dorab wolf herring, Chirocentrus dorab, cut into pieces and frozen. Mullu vaalai, the thorny vaalai, is a long, silver fish valued in Tamil and Sri Lankan kitchens for its sweet, fine textured flesh, though it has many small bones. How to use it
Thaw in the fridge, rinse and pat dry, then cook through until piping hot. Mullu vaalai is at its best fried hard with a chilli and turmeric rub so the fine bones crisp, or simmered in a thick tamarind kuzhambu where the flesh lifts easily away. Serve with rice and a vegetable poriyal.
