Diamond Foods Sardine is whole Indian oil sardine, Sardinella longiceps, the mathi or chaala of Kerala and the saalai of Tamil homes. These small, silver, oily fish are packed with flavour and are cooked across the south coast as a crisp masala fry or a fiery red curry with kodampuli. Sea caught in the Indian Ocean and frozen with a light ice glaze, 900g of fish to a bag. Find more frozen fish in our Frozen Fish range.
How to use it
Thaw in the fridge, then scale, gut and rinse the fish. For mathi fry, rub with chilli powder, turmeric, pepper, ginger garlic paste and salt and shallow fry in coconut oil until crisp. For mathi curry, simmer in a red chilli, shallot and kodampuli gravy until cooked through.
