Diamond Foods Vannamei Prawns 31/40 P&D are whiteleg prawns, Litopenaeus vannamei, peeled and deveined and individually quick frozen. At 31 to 40 prawns to the pound they are a versatile medium size, just right for curries, biryani, fried rice and pasta, and because the shells and veins are already removed there is no preparation beyond thawing. How to use it
The pack says to defrost thoroughly and cook fully before eating. Thaw in the fridge, drain and pat dry. Stir into a simmering prawn curry or masala for the last few minutes, fold into a biryani before it goes on dum, or stir fry with garlic, ginger, spring onion and soy sauce. Cook until pink and opaque all the way through. Do not refreeze once thawed.
