Diamond Foods Catering Porotta is the Kerala layered flatbread in a bag of ten, made at full catering size and frozen flat. The dough is wheat flour worked with vegetable fat until it pulls into fine layers, which is what gives porotta its flaky pull when you crush it between your palms. One bag weighs 908g. How to use it
Cook it from frozen. On a hot non-stick pan it takes two to three minutes with frequent turning, in the oven at 190C about six minutes on the middle shelf, and in the microwave three minutes on full power if you want it soft in a hurry. The pan gives the better crust. Squash the hot porotta lightly in both hands to open the layers before serving it with beef curry, egg roast or a thin fish molee.
