Diamond Foods Whole Crab is blue swimming crab, Portunus pelagicus, sea caught in the Indian Ocean and frozen whole, each crab tied to keep its claws in place. Blue swimming crabs have sweet, delicate white meat and are the crab of choice for a Sri Lankan crab curry, a Chettinad nandu masala or a Singapore style chilli crab. How to use it
The pack says to defrost thoroughly and cook fully before eating. Thaw in the fridge, remove the ties, scrub the shells and lift off the top shell. Remove the gills, halve the body and crack the claws so the sauce can get in. Simmer in a thick, spiced curry of onion, tomato, roasted curry powder, tamarind and coconut milk until the shells are bright orange and the meat is cooked through. Do not refreeze once thawed.
