Diamond Foods Queen Fish is a bag of cleaned, cut queen fish pieces, frozen and packed 800g to a bag. The white, firm and lean flesh stays in neat pieces in a simmering curry and fries without falling apart, so it is an easy fish for weeknight cooking in Sri Lankan and South Indian homes. How to use it
Thaw in the fridge, rinse and pat dry, then cook through until piping hot. Marinate the pieces in chilli powder, turmeric, ginger garlic paste and lime and shallow fry until golden, or add them to a coconut milk curry with green chilli and curry leaves for the last 8 to 10 minutes. Serve with rice or appam.
