Basak Galeta Unu is Turkish dried bread flour, a fine, golden breadcrumb made from wheat semolina and a little salt. In Turkish kitchens it is the coating for fried fish and chicken and the binder that holds köfte together, and the same 250g bag does the job for Indian cutlets, fish fry and chicken kebabs. The crumbs are fine and even, closer to a coarse flour than to fresh breadcrumbs. Find more for the baking cupboard in our Baking range.
How to use it
Dip fish fillets, chicken pieces or potato and vegetable cutlets in beaten egg, roll them in the crumbs and shallow fry until golden. Mix a handful into minced lamb or chicken with onion, herbs and spices for köfte or shami kebabs that hold their shape, or scatter over a pasta bake before it goes in the oven. Fold the bag closed after use and keep it in a cool, dry place.
