Fudco Gram Flour is besan, the pale yellow chickpea flour behind pakoras, onion bhajis, kadhi and a long list of Indian sweets. It mixes to a smooth batter that fries crisp and golden, and it thickens yoghurt curries without turning them grainy. The 2kg bag suits a family that cooks with besan every week. How to use it
For pakoras, whisk besan with water, salt, chilli powder, turmeric and ajwain to a thick coating batter, dip sliced onion, potato or spinach, and fry in hot oil until crisp. Stir a few spoonfuls into yoghurt and water for kadhi, steam a thin batter for dhokla, or roast it slowly in ghee with sugar for besan ladoo. Sift it before use if it has settled in the bag.
