Yellow cucumber is a plump, oval Indian cucumber with yellow skin striped in dark green, a firm pale flesh and a seedy centre. It tastes mild and faintly sour, and it is cooked far more often than eaten raw. In Andhra it is dosakai, cooked into dosakai pappu with toor dal and made into a tangy pachadi chutney; Kerala cooks use the same cucumber, vellarikka, in moru curry and olan.

      How to use it

Peel, halve lengthways, scoop out the seeds and taste a small piece first, as the odd cucumber can be bitter. Cut into cubes and cook with toor dal, turmeric, green chilli and tomato until soft, then finish with a tadka of mustard seeds, garlic and curry leaves for pappu. For pachadi, grind raw cubes with roasted chilli, mustard seeds, tamarind and salt to a coarse chutney.
