Apollo White Garlic in the 700g net is the size for kitchens that get through garlic quickly: a family that grinds fresh ginger garlic paste every week, or anyone cooking biryani or curry for a crowd. The bulbs are whole and dry, with tight white and pink skins, and keep well out of the fridge. Kept somewhere cool and airy, dry garlic lasts for weeks.
How to use it
Peel a big batch at once by separating the cloves into a bowl of warm water for 10 minutes, then pinch off the skins. Blend with an equal weight of ginger, a pinch of salt and a spoon of oil, and keep the paste in a clean jar in the fridge. Whole cloves go into Sri Lankan garlic curry, pickles and slow cooked lamb; sliced cloves make a crisp tarka for dal. Keep the bulbs you are not using whole and somewhere cool, dry and airy.
