Apollo White Garlic in the 350g net holds several whole, dry bulbs of 55 to 60mm, firm under papery white and pink skin. It is the everyday size for a family that cooks Indian or Sri Lankan food most days. Garlic goes into nearly every masala base, into ginger garlic paste, pickles, chutneys and the tempering for dal and sambar.
How to use it
Pull a bulb from the net and break it into cloves as you need them. To peel a handful quickly, crush them lightly with the side of a knife, or soak the cloves in warm water for 10 minutes so the skins slip off. Grind garlic with ginger and green chilli for a fresh paste, slice it for a garlic and chilli tarka over spinach, or roast whole cloves in their skins for a milder, sweeter flavour. Store the net in a cool, dry place with air around it.
