Apollo White Garlic comes as whole, dry bulbs in a white net, each one 55 to 60mm across with papery white skin flushed with pink. Dry garlic keeps for weeks in the kitchen, and a 175g net holds a few bulbs, enough for a week of everyday cooking. Use it wherever a recipe starts with garlic: the tarka for dal, the masala base for a curry, rasam, or a pan of stir fried greens.
How to use it
Break off as many cloves as you need and leave the rest of the bulb whole, which keeps it fresher. Press each clove under the flat of a knife to loosen the skin, then peel and slice, chop or crush. For a South Indian rasam, crush the cloves with black pepper and cumin; for a North Indian curry, fry minced garlic with onion and ginger until golden before adding the spices. Keep the net somewhere cool, dry and airy, out of the fridge.
