Ching's Secret Red Chilli Sauce is a bright red, sweet and hot sauce, the everyday chilli sauce of Desi Chinese cooking in India. It is thicker and sweeter than the green chilli sauce, which is why it goes into the sticky gravy of chilli chicken, chilli paneer and Manchurian as well as onto the side of the plate. How to use it
For chilli paneer, fry the paneer, then toss it in a hot wok with garlic, onion and peppers, a tablespoon of red chilli sauce, a little soy and vinegar, and a spoonful of cornflour slurry to gloss the sauce. Stir it through fried rice and noodles, or serve it straight from the bottle with spring rolls, samosas, pakoras and fries. Close the cap after use.
