Ching's Secret Dark Soy Sauce is the thick, deep brown soy sauce behind the colour and savoury depth of Desi Chinese cooking, the Indo-Chinese food of street carts and home kitchens across India. It is darker and slightly sweeter than a light soy, so a spoonful turns fried rice, Hakka noodles and chilli chicken a glossy brown. How to use it
Stir fry garlic, ginger, spring onion and vegetables over a high flame, add cooked rice or boiled noodles, then pour a tablespoon or two of dark soy around the edge of the wok and toss until every grain is coloured. Add it with red chilli sauce and vinegar to the gravy for chilli paneer, gobi Manchurian or chicken Manchurian. The pack also suggests it as a dip and in marinades. It is salty, so season at the end.
