Balaji Sattvapurna Malabari Paratha is the coiled, many layered flatbread of Kerala's Malabar coast, made here from refined wheat flour, water, corn oil, a little sugar and salt. The dough is wound into a spiral before it is frozen, so the paratha comes off the pan crisp at the edges with soft, pull apart layers inside. How to use it
Put a paratha straight from the freezer onto a preheated pan or tawa and cook it on a medium heat for about 2 minutes, moving it around the pan with gentle, even pressure. Turn it and carry on until both sides are golden brown, then serve hot, with ghee or butter on top if you like. Crush it lightly between your palms as it comes off the heat to open up the layers. Malabari paratha goes with egg curry, Kerala beef or chicken fry, vegetable kurma and chana masala.
