White Tower Tomato Paste is double concentrated Greek paste at 28 to 30 per cent soluble solids, with no added salt, in a 4.55kg catering tin. It is thick, dark and intensely savoury, so a spoonful of the White Tower does the work of half a tin of chopped tomatoes. It adds concentration more than body, and at 4.55kg it is a restaurant size: if you are cooking for a family, a small tube will serve you better.
How to use it
Fry a tablespoon in the oil with the onion and spices before any liquid goes in, so it darkens and loses its raw edge. It colours and thickens a biryani gravy, a keema or a chilli. Once the tin is open, decant what is left into a tub and keep it in the fridge.
