White cabbage is a dense, heavy head of tightly packed pale green leaves with a crisp, sweet crunch. Shredded fine, it cooks in minutes for a Kerala cabbage thoran with coconut and mustard seeds, a Gujarati sambharo, or a Punjabi patta gobhi sabzi with peas and potato. Raw, it makes a sharp coleslaw or a Sri Lankan gova mallum.
How to use it
Pull off the outer leaves, cut the head into quarters and slice out the hard core, then shred as finely as you can. For thoran, splutter mustard seeds, urad dal and curry leaves in coconut oil, add the cabbage with turmeric and green chilli, and stir fry for 5 minutes before tossing in grated coconut. Keep the lid off so it stays crisp. Leftover leaves go into spring rolls, momos or a vegetable soup.
