Viswas Yam Suran Cooked is elephant foot yam, known as suran in North India and chena in Kerala, peeled, cut and cooked with a little salt before freezing. Yam has a dense, earthy texture that holds its shape in curries, and because it is already cooked it saves a long boil and the itchy job of peeling it raw. It is a favourite in Kerala erissery and avial, and in Gujarati and Maharashtrian dry sabzis. Explore more in our Frozen Vegetables range.
How to use it
Thaw the pieces you need, then add them to a coconut and black pepper erissery, mixed vegetable avial or a spiced suran sabzi with mustard seeds and curry leaves. The cooked pieces can also be shallow fried with chilli and turmeric until crisp at the edges. Because the yam is already cooked, it only needs heating through in the sauce.
