Viswas Tapioca Whole is raw tapioca, also called cassava or kappa, peeled and cut into large whole pieces, then frozen so you skip the tough bark and waxy skin. Tapioca is an everyday staple in Kerala and Sri Lanka, boiled and served with a fiery fish curry or sambol, and the big pieces suit boiling, steaming and slow cooked curries. How to use it
For best results thaw to room temperature. Boil the pieces in salted water until soft, then serve with lunu miris, coconut sambol or fish curry, or cut them smaller and mash with turmeric, coconut and curry leaves for kappa. Boiled tapioca can also be sliced and fried until crisp. Do not refreeze once thawed.
