Viswas Cut Mango Green is raw green mango, cut into pieces and frozen, so the sharp, tangy flavour of unripe mango is ready whenever you want it. Green mango is essential in Kerala and South Indian kitchens for quick pickles, sour fish and prawn curries, chutneys and sambar, and frozen pieces save hunting for firm raw mangoes out of season. How to use it
To thaw, remove the amount you need and place it in a bowl in the fridge overnight. For quicker thawing, put the pieces in a strainer under cold running water. Stir into Kerala fish curry, prawn curry or dal for a sour note, toss with chilli, salt and mustard oil for an instant pickle, or blend into green mango chutney. Keep the rest frozen and do not refreeze after thawing.
