Vine tomatoes are ripened and sold still attached to the green stem, which keeps the fruit firm and gives them a strong, fresh tomato smell. The flesh is juicy with a good balance of sweet and sharp. They cook down into the base of most curries, go into rasam and tomato chutney, and slice well for kachumber or a sandwich.
How to use it
Pull the tomatoes off the vine as you need them and rinse. For a curry base, chop or grate them into onion, ginger and garlic that has browned in oil, add the ground spices and cook until the oil separates. For rasam, crush two tomatoes into tamarind water with pepper, cumin and garlic and bring to a froth. Thin slices with salt, pepper and red onion make a quick salad next to rice and curry.
