Thai green aubergines are round, golf ball sized fruit with pale green skin streaked in white and a firm, seedy flesh. They have a slightly bitter edge and hold their shape in a curry, soaking up coconut milk and spice without going to mush. Thai cooks quarter them into green and red curries, and they work in a South Indian kuzhambu or a Sri Lankan coconut curry in the same way as small purple brinjals.
How to use it
Rinse, trim the stalks and cut each one into quarters just before it goes into the pot, dropping the pieces into salted water if you need to hold them. Simmer in a green curry with coconut milk, basil and lime leaves for about 8 minutes, until tender but still whole. For an Indian dish, cut a cross into the base, stuff with a roasted peanut and spice paste, and cook covered in a little oil until soft.
