Spring onions, also called scallions or hara pyaz, are young onions with slim white bulbs and long, hollow green tops. Both parts are eaten: the white end is sharp and crisp, the green milder and fresh. They go into Indo Chinese fried rice, noodles and chilli chicken, a Punjabi hara pyaz sabzi with besan, salads, raitas and stuffed parathas.
How to use it
Trim the roots and any dry tips and rinse. Slice the white and green parts separately; the whites go in earlier with the other aromatics, the greens at the end. For a quick sabzi, fry the chopped whites with cumin and green chilli, add the greens and a spoon of besan or a handful of potato, and cook for 5 minutes. Scatter sliced greens over fried rice, noodles and dal.
