Samudra Cut Crab is blue swimming crab, Portunus pelagicus, cleaned, cut into pieces and frozen in Sri Lanka, the crab known in Tamil as nandu. The crab is caught in the Indian Ocean with gillnets and packed with nothing added, ready for the rich, peppery crab curries of Sri Lankan and South Indian kitchens. How to use it
The box does not print a cooking method. Thaw the pieces in the fridge, rinse them, then cook them in a spiced gravy of onion, tomato, curry leaves and roasted curry powder or black pepper until the shells turn bright orange and the meat is cooked through. Crab rasam, crab varuval and a coconut milk crab curry with rice or string hoppers are all classic ways to enjoy it. Do not refreeze once thawed.
