Ridge gourd, turai, peerkangai or wetakolu, is a long, dark green gourd with sharp ridges running from end to end. Under the ridges the flesh is pale, soft and spongy, with a delicate, slightly sweet taste. It cooks quickly into a tender sabzi, a South Indian kootu or peerkangai dal, and a Sri Lankan wetakolu curry; the peeled ridges can be ground into a chutney.
How to use it
Wash the gourd and peel off the hard ridges with a peeler, leaving some of the green skin between them. Taste a small piece raw; if it is bitter, discard the gourd. Cut into cubes. For turai ki sabzi, fry cumin, onion and green chilli, add the gourd with turmeric and salt and cook covered for 8 to 10 minutes; it releases its own water. Keep the peelings to fry and grind with chilli, garlic and tamarind for chutney.
