Purple yam, ratawala or kavuttu valli kizhangu, is a large tuber with rough, brown skin and purple or purple streaked flesh inside. Cooked, it is soft and starchy with a mild, earthy sweetness, a little like sweet potato. Sri Lankan cooks boil it to eat with coconut sambol, or cook it in a coconut milk curry; in Kerala it goes into kootu and puzhukku, and in the Philippines it is ube for sweets.
How to use it
Always cook yam; never eat it raw. The sap can itch, so oil your hands or wear gloves. Peel off the thick skin with a sharp knife and cut into cubes, putting them straight into water to stop browning. Boil in salted water with turmeric for 15 to 20 minutes until soft, then eat with pol sambol, or mash into a curry with coconut, cumin and green chilli.
