Natco Gungo Peas are cooked pigeon peas in salted water, 240g drained, and the pulse behind a proper Caribbean rice and peas as well as a good deal of Trinidadian and Guyanese cooking. They are small, firm and faintly nutty, and they hold their shape through a long simmer in coconut milk. For a Punjabi curry you would be better off with black eye beans or the Natco jumbo chickpeas.
How to use it
Fry spring onion, garlic and thyme, add the drained peas with rice and coconut milk, and cook until the rice is done. They also go into a Trinidadian pelau, a gungo pea soup with dumplings, or a curry made with Caribbean curry powder.
